Vegan Wellington


  • 1 sheet vegan puff pastry

  • 2 cups mushroom duxelles (mushroom mixture) (see recipe below)

  • 2 cups baby spinach

  • 2 cups roasted vegetables (e.g., carrots, bell peppers, zucchini)

  • 1 cup vegan mushroom gravy (see recipe below)


  • Roll out puff pastry and layer with mushroom duxelles, spinach, and roasted vegetables.

  • Fold pastry over the filling, sealing the edges.

  • Bake at 375°F (190°C) for 30-35 minutes until golden.

  • Serve with vegan mushroom gravy.
