Ingredients

Ingredients for Falafel:

● 1 can (15 oz) chickpeas, drained and rinsed

● 1/2 cup fresh parsley, chopped

● 1/4 cup red onion, chopped

● 2 cloves garlic, minced

● 1 teaspoon ground cumin

● 1 teaspoon ground coriander

● 1/2 teaspoon salt

● 1/4 teaspoon black pepper

● 2 tablespoons chickpea flour (or other gluten-free flour)

● Olive oil for frying

Ingredients for Tahini Sauce:

● 1/4 cup tahini

● 2 tablespoons lemon juice

● 1 tablespoon water

● 1 clove garlic, minced

● Salt to taste Ingredients for Green Salad:

● 4 cups mixed salad greens (lettuce, spinach, arugula, etc.)

● 1 cup cucumber, sliced

● 1 cup cherry tomatoes, halved

● 1/4 red onion, thinly sliced

To Serve:

● 2 gluten-free pita breads, warmed

Preparation

In a food processor, combine chickpeas, chopped parsley, red onion, minced garlic, ground cumin, ground coriander, salt, and black pepper. Pulse until a coarse mixture forms.

Transfer the mixture to a bowl and stir in chickpea flour until the mixture holds together.

Form small patties with your hands.

Heat olive oil in a skillet over medium heat. Fry the falafel patties for about 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.

For the tahini sauce, whisk together tahini, lemon juice, water, minced garlic, and salt until smooth and creamy.

Toss the salad greens, cucumber, cherry tomatoes, and red onion together in a bowl.

Warm the gluten-free pita breads according to the package instructions.

Serve the falafel on a plate with the green salad, warmed pita bread, and a drizzle of tahini sauce.
